Cake:
cooking spray
1 (16.5-ounce) yellow cake mix
1 (15 ounce) can sweet potatoes, drained and mashed
3 large eggs, at room temperature
3/4 cup buttermilk, at room temperature
1/2 cup vegetable oil
3/4 cup chopped nuts
Frosting:
6 ounces Neufchâtel cheese, softened
1/2 cup butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1/4 cup chopped nuts
Directions
Preheat the oven to 350 degrees F (180 degrees C). Spray a 9×13-inch pan with nonstick cooking spray. Set aside.
Whisk together cake mix, sweet potatoes, eggs, milk, and oil in a bowl. Stir in 3/4 cup nuts; spread evenly into the prepared pan.
Bake in the preheated oven until a toothpick inserted near the center comes out clean, 25 to 30 minutes. Remove to cool on a wire rack.
Beat Neufchâtel cheese, butter, and vanilla together in a bowl with an electric mixer. Add powdered sugar and beat until well combined. Spread frosting evenly over cake and sprinkle with the 1/4 cup chopped nuts.

Cream cheese can be used in place of Neufchâtel cheese.
