Ingredients

nonstick cooking spray

1 eggplant, sliced into 1/2-inch rounds

1 tomato, sliced

ΒΌ cup grated fat-free Parmesan cheese

Directions

Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick spray.

Arrange eggplant rounds on the prepared baking sheet and sprinkle with 1/2 of the Parmesan. Layer one tomato slice over each eggplant round, then sprinkle with remaining Parmesan.

Bake in the preheated oven for 10 to 15 minutes.
