1 cup unsalted butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ½ cups rolled oats
1 cup wheat germ
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups chopped pecans
1 cup flaked coconut
1 cup chopped pitted dates
Directions
Preheat the oven to 325 degrees F (165 degrees C).
Beat butter, white sugar, and brown sugar together in a large bowl with an electric mixer until smooth. Beat in eggs, one at a time, then stir in vanilla. Whisk oats, wheat germ, flour, baking powder, baking soda, and salt together in a separate bowl; stir into butter mixture. Stir in pecans, coconut, and dates.
Drop rounded spoonfuls of dough onto ungreased cookie sheets.
Bake in the preheated oven until lightly browned and edges are set, 8 to 10 minutes. Cool cookies on cookie sheets for 1 to 2 minutes before transferring to a wire rack to cool completely.
