Khari Truffle Mushroom

Ingredients
300 g mushrooms, finely chopped
2 tbsp unsalted butter
¼ cup finely-chopped shallots
1½ tbsp fresh thyme, chopped
Salt, to taste
Freshly-ground black pepper, to taste
10 ml truffle oil
30 g Parmesan cheese
50 ml fresh cream
10 g garlic, minced

Method
1. In a large skillet, melt the unsalted butter over medium heat. Add the shallots and minced garlic, cooking until softened for 2-3 minutes.
2. Add in the chopped mushrooms, half a teaspoon of salt, and freshly-ground black pepper. Cook for 4-5 minutes, stirring occasionally, until mushrooms are soft and have released their liquid.
3. Increase heat to medium-high. Cook until the liquid evaporates while stirring occasionally.
4. Add the fresh cream and Parmesan cheese and stir for about 2-3 minutes. Remove from heat and add fresh thyme and truffle oil.
5. Arrange your khari biscuits on a tray and place a spoon of the mushroom mixture on them. Garnish with fresh thyme and Parmesan, and serve fresh.
