I’m always trying to make lighter salad dressings. Recently, I learned the trick of using water and cornstarch to replace most of the oil in dressing recipes. This version is much healthier and soo yummy!

Healthier Poppy Seed Salad Dressing for 2 Recipe

Ingredients

¼ cup water

¼ cup cider vinegar

1 tablespoon white sugar

1 teaspoon extra-virgin olive oil

1 teaspoon cornstarch

½ teaspoon salt

¼ teaspoon onion powder

¼ teaspoon mustard powder

¼ teaspoon poppy seeds

Directions

Mix water, vinegar, sugar, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds in a saucepan. Bring mixture to boil; cook, whisking constantly, until dressing is thickened, 30 seconds. Remove from heat and cool.
