Ingredients

cooking spray

½ medium onion, finely chopped

1 ½ cups chicken broth

1 (16 ounce) package frozen baby lima beans

1/4 cup water, or as needed to cover

Directions

Spray a large saucepan with cooking spray and heat over medium heat. Add onion to the hot pan and sauté until translucent, about 5 minutes. Pour in chicken broth and bring to a boil.

Add lima beans and enough water just to cover. Return to a boil, then reduce the heat to low, cover, and simmer until beans are tender, about 30 minutes.
