Watermelon Carpaccio Recipe

Ingredients

1/2 small watermelon

5 basil leaves, or more to taste

2 tablespoons pepitas or a nut of your choice

1/4 cup crumbled feta

1 tablespoon lemon balsamic glaze, or to taste

Directions

Wash the outside of the watermelon with a fruit and veggie cleaner. Cut watermelon in half. With flesh of watermelon facing down, cut thin slices.

With a paring knife, remove the rind from the watermelon. Cut watermelon slices into triangles.

Arrange on a platter and top with feta and pepitas. Drizzle with lemon flavored balsamic glaze and serve.
