This white rotisserie chicken chili won a local soup contest and is very popular with children. The use of rotisserie chicken adds a lot of flavor. Garnish with a dollop of extra sour cream if you like. Doubling the amount of chicken makes a very hearty chili.

2 ½ cups chicken stock
2 cups diced cooked rotisserie chicken
2 (15 ounce) cans cannellini beans, drained
1 (15.25 ounce) can sweet whole kernel corn, drained
1 (4 ounce) can chopped green chiles, drained
2 tablespoons white chicken chili seasoning mix (such as McCormick)
1 teaspoon chicken bouillon granules
½ teaspoon onion powder
½ teaspoon ground black pepper
1 (8 ounce) carton sour cream
1 tablespoon chopped fresh cilantro, or to taste
Directions
Combine chicken stock, rotisserie chicken, beans, corn, chiles, chili seasoning, bouillon granules, onion powder, and black pepper in a pot; bring to boil.
Reduce heat; simmer at least 1 hour. Add sour cream during last 15 minutes of cooking; stir to combine. Garnish with cilantro.

This can also be made in a slow cooker on Low for 4 to 6 hours, adding sour cream 15 minutes before serving.
