1/3 cup yogurt (such as Icelandic Skyr®)

1/3 cup light mayonnaise

1 1/2 tablespoons cider vinegar

1 tablespoon poppy seeds

1 teaspoon dijon mustard

1/2 teaspoon salt

1/2 teaspoon black pepper

5 cups chopped or shredded cabbage

1/3 cup julienned carrot

2 cups unpeeled diced red apple

1/2 cup golden raisins

fresh parsley, for garnish

Directions

Whisk together yogurt, mayonnaise, vinegar, poppy seeds, mustard, salt, and pepper in a large bowl. Stir in cabbage, carrot, apple, and raisins. Garnish with fresh parsley.
