Original recipe (1X) yields 8 servings

1 (1 ounce) package unflavored gelatin (such as Knox), divided

¼ cup boiling water

1/2 cup Irish cream liqueur (such as Baileys), divided

¼ cup strong brewed coffee, boiling

Directions

Sprinkle 1/2 package unflavored gelatin into a heat-resistant bowl; pour boiling water on top, stirring to dissolve. Add 1/4 cup Irish cream liqueur; stir until well incorporated. Pour Irish cream mixture halfway into 8 shot glasses; refrigerate until set, 2 to 4 hours.

Sprinkle remaining 1/2 package unflavored gelatin into a heat-resistant bowl; pour boiling coffee on top, stirring to dissolve. Add 1/4 cup Irish cream liqueur; stir until well incorporated. Pour coffee mixture into 8 half-filled shot glasses. Return to the refrigerator; chill until set, 2 to 4 hours more.

Cook's Note:

If you like your coffee sweet, add sugar or sweetener to the hot coffee before pouring into glasses.
