3 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
2 tablespoons minced shallot
1/2 tablespoon Dijon mustard
1/2 tablespoon chopped fresh tarragon
1/2 teaspoon salt
1/2 teaspoon black pepper
1 (5- to 6-oz.) package butter lettuce, torn or chopped
1 cup sugar snap peas, halve on the bias
4 radishes, thinly sliced
Directions
For vinaigrette, shake together oil, vinegar, shallot, mustard, tarragon, salt, and pepper in a Mason jar until emulsified, about 30 seconds.
Put lettuce, peas, and radishes in a serving bowl. Add vinaigrette; toss to coat.
