Ingredients
16 ounces processed cheese (such as Velveeta®), cut into 1 inch cubes
1 cup whole milk
1 (15 ounce) can no-bean chili (such as Hormel®)
1 tablespoon fresh lime juice (from 1 lime)
1 1/2 teaspoons chili powder
1 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1/4 cup finely chopped white onion
1/4 cup finely chopped fresh cilantro
1 (9 ounce) package yellow or white corn tortilla chips
salsa, for serving

Gather all ingredients.

Heat a large cast iron skillet over medium-high heat. Add cheese and milk; cook, stirring often, until smooth, about 4 minutes.

Stir in chili, lime juice, chili powder, paprika, cumin, salt, and cayenne. Cook, stirring occasionally, until heated through, about 5 minutes. Meanwhile, mix together onion and cilantro in a small bowl.
