Ingredients
2 tablespoons mayonnaise
2 ounces cream cheese, softened, or as needed
2 (5 ounce) cans solid white tuna packed in water, drained and flaked
½ carrot, finely chopped
¼ cup diced red bell pepper
freshly ground black pepper to taste
Directions
Stir mayonnaise and cream cheese together in a bowl until smooth. Add tuna, carrot, and red bell pepper; season with pepper.
Cook’s Note
Make it your own by adding one or two of these optional ingredients as desired: 1 tablespoon of finely minced onion or green onion, 1 to 2 tablespoons of chopped sweet pickles (such as Sechler's candied sweet dills), 2 tablespoons of chopped pecans or almonds, 1 to 2 tablespoons of chopped celery, or 2 tablespoons of chopped dried apricots, cherries, or cranberries.
I have to laugh sometimes when I think I have so many ingredients, that one could ask, "Where is the tuna?"
