Easy Deviled Egg Potato Salad Recipe

Original recipe (1X) yields 4 servings

1 pound potatoes (for 2 cups diced cooked potatoes)

4 large hard boiled eggs, mashed

1/4 cup mayonnaise

2 tablespoons minced onions

1 tablespoon mustard

1 stalk celery, diced

Directions

Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to  20 minutes. Drain. When potatoes are cool enough to handle, peel and cut into 1/2-inch cubes.

Add potatoes, eggs, mayo, mustard, onion and celery to a bowl and stir until well combined. Chill at least 1 hour prior to serving.
