Delicious Rainy Day Treat Foods – Chocolate Mud Pie

Prep time: 10 minutes + preheating

Cooking time: 35 minutes

Ingredients
1 cup flour
1¼ cup brown sugar
1/3 cup cocoa powder
½ tsp coffee powder
1½ tsp baking powder
½ tsp baking soda
1 cup milk
1/4 cup oil
1½ tsp vanilla essence
½ cup chocolate chips

For the ganache:
1 cup grated dark chocolate
1½ cups fresh cream

Method

  • Preheat the oven to 180°C.
  • Mix together all the ingredients for the cake to a smooth batter, and transfer to a 6-inch baking dish.
  • Bake the cake in the preheated oven for 25 minutes. You can also cook it in an airfryer for 25 minutes at 180° C, and in a microwave on High for four minutes. Keep in mind that a mud pie is supposed to be a little uncooked at the bottom – that’s what makes it so gooey – so do not overbake it.
  • Cut the mud pie into cubes in the baking dish – this is to help the ganache get to every part of the cake.
  • To prepare the chocolate ganache, cook the dark chocolate and cream in a double boiler until the chocolate melts (see tips).
    Pour the hot ganache over the cake.Tip: You can also melt the chocolate and cream for the ganache in a microwave at 30-second intervals, stirring in between, until the chocolate melts. Serve the mud pie with ice cream.
