Ingredients

1 cup finely chopped fresh pineapple

¼ cup finely chopped red onion

¼ cup red bell pepper, chopped

1 jalapeño  pepper, seeded and minced

1 tablespoon finely chopped fresh cilantro

1 tablespoon lime juice

1 clove garlic, minced (Optional)

½ teaspoon white sugar

½ teaspoon salt

Directions

Mix pineapple, red onion, bell pepper, jalapeño, cilantro, lime juice, garlic, sugar, and salt together in a bowl until combined; cover and refrigerate for 1 hour so flavors can meld.

Cook’s Note

You can substitute papaya, mango, or even yellow bell pepper for the pineapple.
