2 tablespoons peanut butter
¼ cup plain Greek yogurt
½ teaspoon stevia brown sugar blend
⅛ teaspoon vanilla extract
1 tablespoon chocolate chips, or to taste
Directions
Microwave peanut butter in a microwave-safe bowl until liquid and smooth, about 20 seconds.
Stir Greek yogurt into the peanut butter with a spoon until smooth, scraping off any peanut butter stuck to the spoon. Stir in stevia and vanilla extract. Fold in chocolate chips.
Cook's Notes:
For a stronger peanut butter flavor, use up to 3 tablespoons peanut butter.
You can use vanilla Greek yogurt instead. Omit the vanilla extract if you do.
You can omit the chocolate chips and use the mousse as a topping on something else.
