This is not your mama’s Rotel dip. Elevate your old standby with a few tasty additions—taco seasoning, green onions, cilantro, and lime juice—for maximum flavor. You can serve it with tortilla chips, and it’s amazing with celery sticks, too.

Ingredients
1 pound Mexican flavor processed cheese food (such as Velveeta® Mexican)
1 (10 ounce) can diced tomatoes with green chilies (such as RO-TEL® Original), with juice
1 teaspoon taco seasoning, or to taste
1/4 teaspoon cayenne pepper, or to taste
4 green onions, thinly sliced, white and green parts, divided
1/3 to 1/2 cup chopped cilantro
1/2 lime, juiced
cilantro sprigs for garnish (optional)
Directions
Cut Velveeta® Mexican into 1-inch cubes and place in a 1 1/2 quart microwave-safe dish. Microwave at 50% power, about 3 minutes.
Stir in RO-TEL® with juice and microwave an additional 3 to 5 minutes on 50% power. Stir until well blended.
Add taco seasoning and cayenne, and microwave at 50% power until Velveeta is fully melted and ingredients are evenly distributed, about 1 minute more.
Reserve about 2 tablespoons of the green parts of green onions for garnish. Stir in remaining green onions, cilantro, and lime juice; microwave about 1 minute more at 50% power. Dip will be thick; if you prefer it thinner, stir in milk or water, 1 tablespoon at a time, to thin.
Garnish with reserved green onion tops and additional cilantro sprigs, if desired. Serve warm.
