1 deli rotisserie chicken, meat removed and shredded
1 white onion, chopped
4 hard-boiled eggs, chopped
½ cup sweet-hot pickle relish
1 tablespoon Dijon mustard
1 teaspoon paprika
½ teaspoon red pepper flakes
½ cup mayonnaise, or to taste
salt and ground black pepper to taste
Directions
Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn't too moist. Season with salt and pepper.
Cook’s Note
If you purée the onion, drain off the liquid before adding it to the salad. This method gives a slightly more intense onion flavor.
