This recipe for a salad with artichoke hearts was given to me by a friend, who got it from a little pasta house restaurant in her hometown. It’s made with mixed greens, red onion, and artichokes, and tossed in a vinegar and oil dressing.

Salad with Artichokes Recipe

Ingredients

4 cups mixed salad greens

1 (14 ounce) can artichoke hearts in water, drained

½ red onion, sliced

½ cup vegetable oil

½ cup red wine vinegar

1 teaspoon seasoned salt

1 teaspoon garlic powder

1 teaspoon ground black pepper

3 tablespoons grated Parmesan cheese

Directions

Combine mixed greens, artichoke hearts, and onion in a large bowl.

Whisk oil, vinegar, seasoned salt, garlic powder, and pepper together in a separate bowl. Pour desired amount of dressing over the salad, and toss to coat.

Sprinkle with grated Parmesan cheese, and serve.
