2 cups reduced sodium chicken broth
1 cup converted rice
1 onion, chopped
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 1/2 pounds skinless boneless chicken thighs, cut into bite-sized pieces
1 (10-ounce) package frozen peas and carrots
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (optional)

In a 3 1/2- to 4-quarts slow cooker stir together broth, rice, onion, mustard and thyme. Add frozen peas and carrots. Season chicken thighs with salt and pepper.
