This Spam and eggs recipe is quick and easy. I’m on a diet that requires I eat over twice as much protein as carbohydrates, and this is hard since I Iove rice and biscuits! After days of eating tuna and eggs (not together), I came up with this recipe.

Ingredients
2 large eggs, beaten
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam), cubed
2 ounces Cheddar cheese, grated
Directions
Heat a nonstick skillet over medium heat. Pour eggs into the skillet, then scatter luncheon meat over top. Cook and stir until eggs are nearly set, 3 to 4 minutes. Sprinkle cheese over top and stir until cheese is melted, 1 to 2 minutes.
