Ingredients
2 teaspoons olive oil
1/2 cup finely chopped onion
1 can (15 oz) can white beans drained and rinsed
8 oz cream cheese
3/4 cup sour cream
8 oz green chiles
1 1/2 tsp chili powder
1/2 teaspoon cumin
1 teaspoon kosher salt
2 tablespoons hot sauce
2 cups cooked chicken
2 cups pepper jack cheese
1/4 cup chopped cilantro
1 pepper jalapeno
Directions
Preheat the oven to 375 degrees F (190 degrees C).
Heat oil in a small skillet over medium high heat. Add onion and cook, stirring constantly, until softened, about 3 minutes. Set aside.
Add beans to a bowl and mash them with a fork until slightly creamy, yet still have some shape and texture. Add in reserved onions, cream cheese, sour cream, chiles, chili powder, cumin, salt and hot sauce and stir until combined. Fold in chicken and pepper jack until well combine. Pour mixture into a 2 to 3 quart baking dish.
Bake in the preheated oven until bubbly and lightly browned, about 30 minutes. Let stand 5 to 10 minutes before serving, garnished with cilantro and jalapenos if desired. Serve with corn or tortilla chips
